Cook the chocolate-cream base
- In a saucepan, whisk cocoa powder with 1/4 cup of the granulated sugar, then whisk in the heavy cream and whole milk. Heat over medium, whisking continuously, until the mixture is steaming and fully combined.
- Add the finely chopped dark chocolate to the steaming cocoa mixture and whisk until fully melted and smooth.
Make and cook the custard
- In a bowl, whisk the egg yolks with the remaining 1/2 cup granulated sugar until pale and slightly thickened.
- Slowly whisk the hot chocolate cream into the egg yolks to temper, then return the mixture to the saucepan.
- Cook over medium-low heat, stirring constantly, until the custard coats the back of a spoon and reaches 175°F.
Chill and churn
- Strain the custard through a fine mesh sieve, then stir in the vanilla extract and salt.
- Cool completely over an ice bath, stirring occasionally to prevent a film from forming.
- Refrigerate at least 4 hours or overnight until very cold.
- Churn in an ice cream maker, then freeze until firm.
