Ingredients

Green beans
  • 1.5 lb fresh green beans trimmed
Bacon
  • 8 bacon slices, halved crosswise
Brown sugar garlic butter glaze
  • 0.25 cup butter melted
  • 0.33333333333333 cup brown sugar
  • 2 garlic cloves, minced
  • 1 tbsp soy sauce
  • 0.25 tsp black pepper

Equipment

  • 1 sheet pan

Method

Blanch and prep
  1. Preheat oven to 400F. Blanch trimmed fresh green beans in boiling water for 3 minutes, then immediately plunge into ice water and drain.
  2. Gather 8-10 beans into a bundle. Wrap each bundle with a half slice of bacon and place seam-side down in a baking dish (or on a sheet pan).
Glaze and bake
  1. Whisk melted butter, brown sugar, minced garlic, soy sauce, and black pepper until smooth and combined. Pour the glaze evenly over the bacon-wrapped bundles.
  2. Bake at 400F for 25-30 minutes, until the bacon is crisp and the glaze is bubbly. Spoon the pan glaze over the bundles and serve warm.

Notes

For clean ice-water shocking, keep the ice bath ready before blanching. Store leftovers in the refrigerator up to 3 days; reheat covered at 350F until hot. Freezing is not recommended because bacon texture softens. If you want a lower-sodium option, use reduced-sodium soy sauce.
