Ingredients

apple filling
  • 6 apples large, peeled and sliced
  • 0.3333333333 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
oatmeal crumble
  • 2 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.75 cup cold unsalted butter cubed
  • 1 vanilla ice cream for serving

Equipment

  • 1 sheet pan

Method

Prepare the oven and apples
  1. Preheat the oven to 375°F and grease a 9x13 baking dish. Set up so the filling can go straight in once mixed.
  2. Toss the apple slices with granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice until evenly coated. Spread the apples in the prepared dish in a single, even layer.
Make the oatmeal crumble and bake
  1. Combine old-fashioned rolled oats, all-purpose flour, brown sugar, cinnamon, and salt in a bowl. Cut in the cold unsalted butter until large, chunky clumps form.
  2. Scatter the oatmeal crumble generously over the apples so every inch is covered. Aim for an even layer so the topping turns crisp instead of thin.
  3. Bake for 40-45 minutes at 375°F until the topping is deeply golden and the apple filling bubbles at the corners. Look for active bubbling around the edges as the visual cue.
Rest and serve
  1. Rest the crisp for 10 minutes at room temperature. This helps the bubbling juices thicken for cleaner serving slices.
  2. Serve warm with vanilla ice cream. Let the ice cream melt slightly over the golden crumble for the best texture contrast.

Notes

For a thicker, less-runny filling, make sure the apple slices are evenly coated with cornstarch and bake until you see bubbling specifically at the corners. Store covered in the refrigerator for up to 4 days; reheat individual portions in the microwave. Freezing is not recommended because the crumble texture can soften after thawing. For a dairy-free option, use vegan butter in the crumble and serve with dairy-free vanilla ice cream.
