Notes

Pro tip: squeezing the grated zucchini dry helps prevent a watery bake and keeps the casserole tender. Store covered in the fridge for up to 4 days; reheat portions in the microwave or warm in a 325F oven until hot. Freezing is yes—cool completely, wrap tightly, and freeze up to 2 months; thaw in the fridge overnight before reheating. For a lower-fat swap, use reduced-fat sour cream and reduced-fat cheddar.
