Ingredients

Ground beef mixture
  • 1.5 lb ground beef
  • 2 green bell peppers
  • 1 red bell peppers
  • 1 onion
  • 4 garlic
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cup beef broth
  • 2 tbsp tomato paste
Seasoning and rice
  • 1 cup long grain white rice
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.1 tsp salt to taste
  • 0.1 tsp pepper to taste
Serving
  • 1 cup shredded cheddar for serving
  • 0.25 cup fresh parsley for serving

Equipment

  • 1 Dutch oven

Method

Brown the beef
  1. Brown the ground beef in a large pot over medium-high heat, stirring and breaking it up until no longer pink, about 6-8 minutes. Drain the fat so the soup stays hearty but not greasy (visual cue: beef is browned and crumbly).
Sauté vegetables
  1. Sauté the onion and both diced bell peppers in the same pot over medium heat for 4-5 minutes, stirring occasionally. Cook until the vegetables soften slightly (visual cue: peppers turn bright and glossy).
  2. Add the minced garlic and tomato paste and cook for 2 minutes, stirring constantly so they darken slightly. Keep it hot but not burnt (visual cue: mixture smells fragrant and looks thicker).
Simmer the soup
  1. Add the crushed tomatoes, diced tomatoes, beef broth, Italian seasoning, garlic powder, and smoked paprika to the pot. Bring everything to a boil over high heat (visual cue: vigorous bubbling across the surface).
  2. Stir in the uncooked long grain white rice. Reduce heat to maintain a gentle simmer, cover, and simmer for 18-20 minutes until the rice is cooked and tender (visual cue: rice grains are soft and the broth thickens slightly).
Season and serve
  1. Season the soup with salt and pepper to taste. Stir well until evenly distributed (visual cue: flavor is balanced and no plain tomato taste remains).
  2. Ladle the soup into bowls and top each serving with shredded cheddar and fresh parsley. Serve hot so the cheese begins to melt (visual cue: cheddar softens on the surface).

Notes

For best texture, keep the simmer gentle once the rice is added—rapid boiling can make rice cook unevenly. Store in an airtight container in the refrigerator up to 4 days; the rice will continue to absorb liquid, so add a splash of broth when reheating. Freezing is yes, but expect softer rice after thawing. For a lighter option, use 93% lean ground beef or swap to ground turkey while keeping the seasonings the same.
