Make the matcha cookie dough
- Preheat oven to 350F and whisk together all-purpose flour, matcha powder, baking soda, and salt until evenly green-speckled.
- Beat unsalted butter and granulated sugar until fluffy, then add egg and vanilla extract and mix until smooth.
- Stir the flour-matcha mixture into the butter mixture just until a smooth, vivid green dough forms, with no dry streaks.
Bake and cool the cookies
- Scoop dough into large rounds and press them flat onto a lined sheet pan.
- Bake 10-12 minutes at 350F until edges are set while the center stays vibrant green; remove and cool completely.
Assemble and freeze sandwiches
- Sandwich softened strawberry ice cream between two matcha cookies, pressing gently to help them meet.
- Roll the ice cream edge in white sesame seeds so the filling edge is lightly coated.
- Wrap each sandwich and freeze for at least 2 hours before serving, until the ice cream is firm.
Notes
For clean, even sandwiches, let the cookies cool fully so the ice cream doesn’t melt into the edges. Store wrapped sandwiches in the freezer up to 2 months (freeze yes; fridge no). For a lighter option, use reduced-fat vanilla ice cream flavored with strawberry for a lower-fat strawberry ice cream sandwich while keeping the matcha-cookie structure.
