Method
Brown the beef and assemble
- Brown and drain the ground beef, then add it to the slow cooker.
- Add the cabbage, carrots, celery, onion, garlic, crushed tomatoes, diced tomatoes, beef broth, Worcestershire sauce, smoked paprika, red pepper flakes, garlic powder, and cumin to the slow cooker and stir to combine.
Cook until tender
- Cook on Low for 7–8 hours, or High for 4–5 hours, until the cabbage and vegetables are very tender.
Season and serve
- Season with salt and pepper to taste; the soup should be thick and deeply flavored after cooking.
- Serve hot with green onions and hot sauce.
Notes
For best flavor, brown the beef thoroughly so the soup has a deeper base even after hours of simmering. Refrigerate leftovers in a sealed container for up to 4 days; reheat gently on the stovetop or in the microwave. Freezing is yes—freeze up to 3 months and thaw overnight in the fridge. For a lower-sodium option, use reduced-sodium beef broth and choose a reduced-sodium Worcestershire sauce if available.
