Pumpkin pecan cobbler with a pour-over batter that bakes into tender cake and a bubbling caramel-pumpkin sauce underneath. Golden pecans and a spiced topping sink as it bakes for a warm, spoonable dessert.

Ingredients

For the batter
  • 1 cup all-purpose flour
  • 0.75 cup granulated sugar
  • 1.5 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.5 cup pumpkin puree
  • 0.25 cup melted butter
  • 0.33 cup milk
  • 1 tsp vanilla extract
For the topping (poured over but sinks to form sauce)
  • 0.5 cup brown sugar, packed
  • 0.25 cup granulated sugar
  • 1 tsp cinnamon
  • 1.5 cup very hot water
For pecans and serving
  • 1 cup pecans, roughly chopped
  • 1 vanilla ice cream

Equipment

  • 1 sheet pan

Method

Bake
  1. Preheat the oven to 350F and butter a 9x13 baking dish.
  2. Whisk together all-purpose flour, granulated sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. Stir in pumpkin puree, melted butter, milk, and vanilla extract, then spread the batter evenly in the dish.
  4. Scatter the pecans over the batter.
  5. Mix brown sugar, granulated sugar, and cinnamon, then sprinkle it evenly over the batter.
  6. Pour very hot water over everything without stirring, so the topping can sink and form sauce as it bakes.
  7. Bake for 40-45 minutes at 350F until the center is just set, with caramel-pumpkin sauce bubbling underneath.
  8. Serve warm, alongside vanilla ice cream.

Notes

Pro tip: don’t stir once the hot water is poured—leave the layers to develop the signature cobbler cake plus caramel-pumpkin sauce. Store covered in the fridge for up to 4 days; rewarm portions in the microwave until hot. Freeze baked cobbler (without ice cream) for up to 2 months and thaw overnight in the fridge. For a lighter option, swap part of the sugar for an equal-measure baking sweetener blend that browns (results may vary).
