Make the honey graham cookies
- Preheat the oven to 350F and line a sheet pan. Whisk the all-purpose flour, whole wheat flour, baking soda, cinnamon, and salt together in a bowl.
- Beat the softened unsalted butter and packed brown sugar until fluffy. Add the honey, whole milk, and vanilla extract and mix until smooth.
- Stir the flour mixture into the wet ingredients until a dough forms. Roll the dough to 1/4-inch thick and cut into 3-inch squares.
- Bake for 10-12 minutes at 350F until golden. Cool completely on the sheet pan.
Assemble and freeze sandwiches
- Place mango ice cream or sorbet between two graham cookie squares to form sandwiches. Press the edges into toasted coconut flakes and lime zest so the sides are coated.
- Freeze the sandwiches for at least 2 hours until firm. Serve with a squeeze of lime.

Pro tip: soften the mango ice cream or sorbet just enough to spread, but keep it cold enough to hold shape while assembling—if it gets too melty, freeze it briefly before pressing into coconut and lime zest.
