Carrots
  • 3 carrots
Celery

Onion
  • 1 onion
Garlic
  • 4 garlic
Chicken broth
  • 8 cup chicken broth
Fresh lemon juice
  • 0.333 cup fresh lemon juice
Lemon zest
  • 2 tbsp lemon zest
Olive oil
  • 2 tbsp olive oil
Baby spinach
  • 2 cup baby spinach
Fresh dill
  • 2 tbsp fresh dill
Dried thyme
  • 1 tsp dried thyme
Eggs
  • 2 eggs optional, for Greek egg-lemon/avgolemono style
Salt
  • 0.25 tsp salt to taste
Black pepper
  • 0.25 tsp black pepper to taste

Equipment

  • 1 Dutch oven

Method

Sauté the vegetables
  1. Heat olive oil in a large pot over medium heat, then sauté onion, carrots, and celery until softened, about 5 minutes, stirring occasionally as they turn glossy.
Simmer the chicken
  1. Add garlic and dried thyme and cook for 1 minute until fragrant.
  2. Add chicken broth and chicken to the pot, then simmer for 18 minutes until the chicken is cooked through and flakes easily.
  3. Remove the chicken, shred it, and return the shredded chicken to the pot.
Cook the orzo
  1. Stir in the orzo and simmer for 8-9 minutes until tender, looking for the pasta to soften while the broth gently bubbles.
Finish with lemon
  1. For avgolemono style, whisk eggs with lemon juice, then slowly ladle a bit of the hot broth into the eggs while whisking to temper, and stir the mixture back into the pot until the soup looks slightly thickened and silky.
  2. For regular style, simply stir in lemon juice and lemon zest to brighten the broth.
  3. Add baby spinach and cook until wilted, about 1-2 minutes, then stir in fresh dill.
  4. Season with salt and black pepper to taste, then stir until evenly distributed and the flavor is balanced.

Notes

Pro tip: if using avgolemono, temper the eggs with hot broth gradually to prevent scrambling; keep the soup at a gentle simmer once the egg mixture is added. Refrigerate in an airtight container up to 4 days; freeze up to 2 months (best if made in regular style without eggs, though frozen and reheated gently still works). For a lighter option, use skinless chicken breast and replace half the olive oil with more broth, keeping the aromatics for flavor.
