Ingredients

Chicken and aromatics
  • 1.5 lb chicken breast or thighs Use boneless for faster shredding.
  • 4 carrots Slice thin for even cooking.
  • 3 celery Slice for consistent texture.
  • 1 onion Dice small so it melts into the broth.
  • 6 garlic Minced for full flavor.
  • 2 tbsp fresh ginger Grate for maximum aroma.
  • 2 cup shiitake or cremini mushrooms Slice for bite-sized pieces.
  • 2 cup kale or spinach Chopped; kale holds up well.
Broth and seasonings
  • 8 cup chicken broth Low-sodium works if you want easier salt control.
  • 1 tsp turmeric Use black pepper to help activate it.
  • 1 tsp dried thyme Stir in while simmering.
  • 0.25 tsp black pepper (activates turmeric) Adds gentle heat and supports turmeric absorption.
  • 1 tbsp lemon juice Stir in at the end for brightness.
  • 8 oz egg noodles Cook until just tender; avoid overcooking.
  • 0.5 fresh parsley For serving; chop lightly.
  • 1 lemon Serve wedges alongside.
  • 0.25 tsp Salt to taste Add gradually, then adjust at the end.

Equipment

  • 1 Dutch oven

Method

Simmer the soup base
  1. Add chicken, chicken broth, carrots, celery, onion, garlic, fresh ginger, turmeric, dried thyme, and black pepper to a Dutch oven and bring to a gentle simmer. Simmer for 20 minutes until the chicken is cooked through and the vegetables are starting to soften, with a steady bubbling surface.
Shred and build flavor
  1. Remove the chicken from the pot and shred it, then return the shredded chicken to the broth. Keep the soup at a gentle simmer so it starts warming the chicken right away.
Cook the mushrooms
  1. Add sliced mushrooms to the pot and cook for 5 minutes at a gentle simmer. Stir once or twice until the mushrooms are tender and the broth tastes deeper.
Cook the noodles
  1. Stir in egg noodles and simmer for 6-8 minutes, until tender. Keep the heat gentle and look for noodles that are fully cooked but not mushy.
Finish with kale and lemon
  1. Stir in the chopped kale or spinach and cook for 3 minutes. The kale should turn bright green and wilt while the broth stays simmering at the edges.
Season and serve
  1. Stir in lemon juice and season with salt to taste, then turn off the heat. Serve hot with fresh parsley and lemon wedges for a bright finish.

Notes

For best texture, keep the soup at a gentle simmer once the egg noodles are in, and avoid boiling hard. Store leftovers in the refrigerator up to 3 days; noodles may soften further. Freezing is not recommended because egg noodles can turn mushy after thawing. If you want a lower-sodium version, choose low-sodium chicken broth and salt gradually at the end so you can control the final taste.
