Simmer the soup base
- Add chicken, chicken broth, carrots, celery, onion, garlic, fresh ginger, turmeric, dried thyme, and black pepper to a Dutch oven and bring to a gentle simmer. Simmer for 20 minutes until the chicken is cooked through and the vegetables are starting to soften, with a steady bubbling surface.
Shred and build flavor
- Remove the chicken from the pot and shred it, then return the shredded chicken to the broth. Keep the soup at a gentle simmer so it starts warming the chicken right away.
Cook the mushrooms
- Add sliced mushrooms to the pot and cook for 5 minutes at a gentle simmer. Stir once or twice until the mushrooms are tender and the broth tastes deeper.
Cook the noodles
- Stir in egg noodles and simmer for 6-8 minutes, until tender. Keep the heat gentle and look for noodles that are fully cooked but not mushy.
Finish with kale and lemon
- Stir in the chopped kale or spinach and cook for 3 minutes. The kale should turn bright green and wilt while the broth stays simmering at the edges.
Season and serve
- Stir in lemon juice and season with salt to taste, then turn off the heat. Serve hot with fresh parsley and lemon wedges for a bright finish.
Notes
For best texture, keep the soup at a gentle simmer once the egg noodles are in, and avoid boiling hard. Store leftovers in the refrigerator up to 3 days; noodles may soften further. Freezing is not recommended because egg noodles can turn mushy after thawing. If you want a lower-sodium version, choose low-sodium chicken broth and salt gradually at the end so you can control the final taste.
