  • 1 cup full-fat cottage cheese Use cold for the smoothest blend.
  • 1 cup frozen pineapple chunks Frozen chunks create the soft-serve texture.
  • 2 tbsp honey or agave Sweeten to taste after blending.
  • 1 tbsp lemon juice Adds brightness and balances sweetness.
  • 0.25 tsp vanilla extract For classic Dole Whip flavor.
  • 0.25 tsp salt A pinch helps the fruit flavors pop.

Method
 

Blend the pineapple soft serve
  1. Add full-fat cottage cheese, frozen pineapple chunks, honey or agave, lemon juice, vanilla extract, and salt to a high-powered blender. Blend until completely smooth, scraping down as needed for a vivid yellow-cream mixture.
  2. Blend for at least 2 minutes more until the texture is silky with no cottage cheese lumps. Pause to check the blender sides—there should be no visible curds.
  3. Taste the mixture and adjust sweetness by adding a little more honey or agave if needed. Mix again briefly until the flavor is even.
Pipe and serve
  1. Transfer the blended mixture to a piping bag fitted with a star tip. Pipe into cups for a soft-serve Dole Whip swirl.
  2. Serve immediately for the creamiest texture. The swirl should hold shape and look glossy in the cup.

Notes

For the smoothest, lump-free result, blend longer than you think—at least 2 minutes—and keep the cottage cheese cold. Store leftovers in a sealed container in the fridge up to 1 day; the texture will firm up, so stir and re-blend briefly before serving. Freezing isn’t recommended because the texture can become icy. Dietary swap: use maple syrup or a sugar-free sweetener in place of honey/agave to reduce added sugars while keeping the same pineapple-cottage cheese base.
