Ingredients

Italian sausage
  • 1 lb Italian sausage
Vegetables & aromatics
  • 1 onion diced
  • 4 garlic minced
  • 2 tbsp tomato paste
Canned & seasonings
  • 28 oz crushed tomatoes
  • 4 cup beef broth
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes
  • 1 salt to taste
  • 1 pepper to taste
Noodles
  • 8 lasagna noodles broken into pieces
Cheeses
  • 1.5 cup shredded mozzarella
  • 1 cup ricotta cheese
  • 0.5 cup freshly grated parmesan
  • 0.5 cup cream cheese cubed
Garnish
  • 1 fresh basil for garnish

Equipment

  • 1 Dutch oven

Method

Brown sausage
  1. Brown the Italian sausage in a large pot over medium-high heat, then drain excess fat.
  2. Keep the sausage in the pot so you can build the soup in the same vessel.
Sauté aromatics
  1. Sauté the diced onion for 4 minutes until softened, then add the minced garlic and tomato paste and cook for 2 minutes.
  2. Stir to coat the onion mixture so the tomato paste cooks slightly and turns fragrant.
Simmer soup base
  1. Add the crushed tomatoes, beef broth, Italian seasoning, and red pepper flakes, then bring the mixture to a boil.
  2. Once boiling, add the broken lasagna noodles and simmer for 10-12 minutes until tender.
Melt in cheeses
  1. Remove the pot from heat, then stir in the cubed cream cheese until smooth.
  2. Stir in half the mozzarella and mix until melted.
  3. Season with salt and pepper to taste.
Serve and garnish
  1. Ladle the soup into bowls.
  2. Top each bowl with a spoonful of ricotta, a handful of the remaining mozzarella, and a sprinkle of parmesan.
  3. Garnish with fresh basil before serving.

Notes

Pro tip: add the cheeses off the heat to prevent a grainy texture. Refrigerate leftovers in a covered container up to 3 days; reheat gently on the stovetop or microwave, adding a splash of broth if needed. Freezing is not recommended because the dairy can separate when thawed. For a lighter option, use part-skim mozzarella and low-fat ricotta (texture stays close to classic).
