Make the custard base
- Heat heavy cream and whole milk in a saucepan until steaming, then slowly whisk the hot dairy into egg yolks beaten with granulated sugar.
- Return the mixture to the saucepan and cook, stirring, until it reaches 175°F; strain the custard and let it cool slightly.
Flavor and color
- Stir in almond extract, vanilla extract, raspberry extract or blue raspberry flavoring, and lemon extract until smooth.
- Add blue food coloring a few drops at a time until the desired electric blue is achieved, stirring after each addition.
- Cool completely before refrigerating.
Chill, churn, and freeze
- Refrigerate the custard for 4 hours, until thoroughly chilled.
- Churn the chilled mixture in an ice cream maker until thickened and creamy.
- Freeze in a container until firm before serving.
