Ingredients

Chicken and canned base
  • 2 can (12.5 oz) canned chicken drained and shredded
  • 1 can (15 oz) black beans drained
  • 1 can (15 oz) corn drained
  • 1 can (10 oz) Rotel diced tomatoes with green chiles
  • 1 can (14 oz) chicken broth
  • 1 packet (1 oz) taco seasoning
Optional flavor boosts
  • 1 packet ranch packet optional
  • 0.25 lb jalapeños optional; use to taste
  • 1 tbsp lime juice optional; add at the end
Toppings
  • 0.33 cup sour cream to serve
  • 0.5 cup shredded cheddar to serve
  • 1 cup tortilla chips to serve
  • 0.25 cup cilantro to serve
  • 1 tbsp lime to serve (optional if using lime juice)

Equipment

  • 1 Dutch oven

Method

Prep the cans
  1. Open all 6 cans and drain the chicken, beans, and corn. Set the drained contents aside so everything is ready to go into the pot.
Simmer the soup
  1. Add the canned chicken, black beans, corn, Rotel, chicken broth, and taco seasoning to a large pot. Stir to combine until the seasoning looks evenly distributed.
  2. Bring the mixture to a boil over medium-high heat, stirring as needed. Watch for active bubbling across the surface to confirm it’s boiling.
  3. Reduce to a simmer and cook for 10-12 minutes until heated through and the flavors meld. The soup should look slightly thicker and more uniform in color.
Finish and serve
  1. Stir in a squeeze of lime juice and adjust seasoning to taste. Taste again so the soup finishes bright rather than flat.
  2. Serve immediately with sour cream, shredded cheddar, tortilla chips, and cilantro. Add toppings at the end so the chips stay crisp.

Notes

For thicker soup, simmer uncovered for the full 12 minutes and stir once halfway through so nothing settles. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat on the stove over medium-low until hot. Freezing is best for the soup base only (no chips); freeze up to 2 months and thaw overnight in the fridge. For a dairy-light option, skip sour cream and use extra lime and cilantro; add jalapeños for heat instead.
