Ingredients

Chocolate covered cranberry sauce
  • 12 oz fresh cranberries Use fresh for the best burst and thickening.
  • 0.75 cup sugar
  • 0.75 cup water
  • 0.25 cup orange juice
  • 3 oz dark chocolate (60-70%) Chopped; melt into the hot sauce for a glossy finish.
  • 1 tsp vanilla extract
  • 0.0625 salt Use a pinch.
  • 0.25 cup dark chocolate shavings For garnish; optional but recommended.

Equipment

  • 1 saucepan

Method

Simmer the cranberry base
  1. Bring sugar, water, and orange juice to a boil in a saucepan over medium-high heat, stirring until the sugar dissolves and the mixture bubbles clearly.
  2. Add fresh cranberries and simmer for 10-12 minutes at a steady simmer, stirring occasionally, until the berries burst and the sauce thickens to a spoon-coating consistency.
Add chocolate and season
  1. Remove the saucepan from heat and stir in chopped dark chocolate, vanilla extract, and salt until fully melted and glossy, with no visible chocolate pieces.
Chill and garnish
  1. Cool the sauce to room temperature for about 10 minutes, then chill until set and thicker in texture.
  2. Top with dark chocolate shavings right before serving for a visible contrast and an extra chocolate bite.

Notes

Pro tip: keep the sauce at a steady simmer (not a rolling boil) so the berries burst evenly and the texture thickens without scorching. Store covered in the refrigerator for up to 4 days; freeze up to 2 months (thaw in the fridge and stir to loosen). For a less-sweet option, reduce sugar slightly to 2/3 cup and taste after chilling to ensure the chocolate still balances the tart cranberries.
