Ingredients
Method
Make the cinnamon sugar rim
- Mix sugar and ground cinnamon on a small plate so the mixture looks evenly speckled.
- Wet the rims of the champagne flutes with chilled apple cider, then dip and rotate the rims in the cinnamon sugar until coated.
Build and garnish the mimosas
- Fill each cinnamon-rimmed flute one third full with chilled apple cider, aiming for a consistent pour line.
- Top each flute with chilled champagne or prosecco until the bubbles rise into the headspace.
- Garnish each drink with an apple slice and a cinnamon stick, then serve immediately.
Notes
For the cleanest rim, chill the apple cider and keep the cinnamon sugar dry so it adheres without clumping. Store leftover components (chilled apple cider and champagne/prosecco separately) in the fridge for up to 2 days; assemble only when ready to serve. For a lower-sugar option, reduce the rim sugar by half and use a dry prosecco or brut-style sparkling wine.
